This is a breakfast staple in my house. The spices are important to develop a flavor, and the sugar is pretty minimal compared to grocery store granola. The cashew butter adds good depth and helps clumps develop.
Ingredients
- 2/3c maple syrup or a blend of simple syrup and molasses
- 2/3c neutral oil
- 1/2c cashew butter or similar
- 3T masala tea spice
- 1T salt
Heat until bubbly in a large pot, then add:
- 5c rolled oats
- 3c nuts: pecan pieces, walnuts, toasted pepitas – whatever your heart desires
Press into a baking tray. Bake at 275 for 1 hour, stirring twice
When it comes out, it will be lightly soft and lightly brown. Do not let it get brown enough in the oven! Take it out when it appears slightly under done!
